With all the gorgeous peaches beginning to fill the stores, we thought we'd bring you a new way to add a little something extra to your weekend brunches.
To make a proper peach bellini, you'll need to work with frozen peaches. You can buy a bag, but if you want to use fresh it's easy to do. After you wash your fresh peaches, slice them into wedges and peel the skin off. Place them on a tray lined with parchment paper and put them in the freezer for at least twelve hours. Once they're frozen through, you can put them in a bag and keep them in the freezer for a few months.
Blossom's Peachy Keen Bellini
- 3 Cups of Frozen Peaches
- 1 Cup Mango Nectar
- 1 (750 mL) Bottle of Your Preferred Sparkling White Wine
- 1 Tbsp Blossom's Mint Syrup per Glass
- Fresh Mint Sprigs (garnish)
Blend frozen peaches and mango nectar until smooth. Pour into a pitcher and then pour the bottle of sparkling wine into the pitcher. Once the bellini has been poured into an individual glass, top with a tablespoon of mint syrup and mix through. Garnish with a fresh mint sprig and enjoy!
